The name "Kooindah" is derived from the local Aboriginal language and is widely understood to mean "clear water"—a fitting tribute to the natural lakes, wetlands and waterways that define the landscape. The resort acknowledges the traditional custodians of the land, the Darkinjung people, whose connection to Country spans thousands of years. The Kooindah Waters development began in 2005, transforming what had previously been an airstrip and parts of the former Strathaven Golf Course into a master-planned golf and residential community. Designed with environmental sustainability at its core, the development seamlessly blended luxury accommodation, an 18-hole championship golf course, residential living and natural wetlands into one harmonious destination.

The Golf Course Officially opened in 2006, the golf course quickly established itself as one of the Central Coast's premier golfing destinations. Built around picturesque wetlands, lakes and native bushland, the course offers both a memorable golfing experience and a sanctuary for abundant wildlife, including black swans, egrets, spoonbills, herons and many other native bird species. In its early days, the clubhouse was far more modest than it is today, with the pro shop and café operating from temporary shipping containers while the permanent facilities were completed. As the community grew, so too did Kooindah Waters, evolving into a thriving residential estate and resort destination renowned for exceptional hospitality, championship golf, Day Spa, conferences, weddings and relaxing escapes.

Mantra Kooindah Waters Golf & Spa Resort opened in 2008, the hotel changed to an Accor Property named Mercure Kooindah Waters Golf and Spa Resort in 2011 and continues this legacy, welcoming guests from across Australia and around the world.
