At Mercure Kooindah Waters Central Coast, we are committed to operating responsibly and reducing our environmental impact where possible. Across our rooms, dining outlets, events, and operations, we continue to introduce small but meaningful initiatives that support more sustainable practices.

Below are some of the ways we are working towards a more sustainable stay for our guests.


Rooms

Our guest rooms incorporate several initiatives designed to reduce water usage, energy consumption, and single-use plastics.

  • Housekeeping is provided on request, helping reduce water and energy usage.
  • Energy-efficient LED lighting is installed throughout guest rooms.
  • Bathrooms feature large bottles of shampoo, conditioner, and body wash, significantly reducing single-use plastic amenities.
  • Glass refillable water bottles are provided in rooms, with complimentary refills available at Karinyas Bar.
  • Water-saving taps and shower heads were installed in all rooms
  • The air-conditioning (HVAC) is at 22 degrees minimum. The heating is set at 19 degrees maximum.

Food & Beverage

Across our dining venues, we aim to reduce waste and support responsible sourcing.

  • Sourcing of seasonal, local, and sustainable ingredients where possible.
  • Responsible portioning and surplus food redistribution to help minimise food waste.
  • Recycling systems are in place across all food and beverage outlets.
  • Use of eco-friendly packaging where available.
  • Eco-friendly takeaway boxes for takeaway meals, where possible.

Drinks

Our beverage offering also supports local sourcing and waste reduction.

  • Locally sourced beverages, where possible.
  • Ongoing reduction of single-use plastics in drink service.

Events & Conferencing

Our meeting and events spaces include simple initiatives designed to reduce waste during conferences and functions.

  • Water jugs are provided instead of individual plastic bottles.
  • Paper coasters are used for water glasses.
  • Bins in event rooms with sections for recyclable waste.
  • Minimal single-use plastics are used during conference service.

Major Annual Environmental Events

  • March: Clean Up Australia Day (local community and school clean-ups across beaches and reserves).
  • June (Long Weekend): Harvest Festival celebrating the rural hinterland and sustainable farming.
  • July: National Tree Day (annual mass plantings, such as recent dune care and wetland restoration at Killcare Beach and Wyong).
  • November: Sustainable Future Festival at Memorial Park, The Entrance (workshops, stalls, and eco-demonstrations).

Guest Noise Policy

  • At Mercure Kooindah Waters, we are committed to providing a peaceful and enjoyable environment for all guests, residents and our surrounding community.
  • We kindly ask all guests to be considerate of others and keep noise to a reasonable level, particularly during evening and overnight hours.
  • Excessive noise, loud music, parties or disruptive behaviour in guest rooms, apartments, balconies and common areas is not permitted. Guests are responsible for ensuring that everyone in their room or apartment respects these guidelines.
  • By respecting our noise policy, you are helping us maintain the relaxing environment of Kooindah Waters and minimise our impact on the surrounding community and natural environment.

Wildlife Policy

To help protect our local wildlife and ensure the safety of our guests, we kindly ask that you:

  • Do not feed, touch or attempt to handle wildlife.
  • Always observe animals from a safe and respectful distance.
  • Do not disturb wildlife, nests or natural habitats.
  • Keep food and rubbish securely contained and dispose of waste responsibly.
  • Never approach an animal that appears injured or distressed. Please notify a member of our team for assistance.
  • Report injured wildlife to Wildlife A.R.C. (Central Coast): Call (02) 4325 0666 for local volunteer rescuers specialised in the region or WIRES: Call 1300 094 737 for general NSW native animal rescue.

Laundry

We continue to improve sustainability practices within our laundry operations.

  • Single-use plastic has been minimised.
  • Laundry powder is purchased in large boxes rather than individual plastic packaging.
  • Energy-conscious laundry practices are in operation.

Energy & Water

Across the property, we aim to operate responsibly with our energy and water use.

  • Energy-efficient equipment is used throughout the hotel.
  • Water-saving initiatives and mindful usage practices are in place.
  • We favour eco-friendly printing, including responsibly sourced paper and vegetable inks where possible.

As part of the global Mercure Hotels network, Mercure Kooindah Waters Central Coast supports the wider sustainability goals set by Accor.
Across our daily operations, we aim to align with Accor’s vision of responsible hospitality by introducing practical initiatives that help reduce waste, limit single-use plastics, and encourage mindful use of energy and water.
While sustainability is an ongoing journey, our team continues to look for ways to improve our practices and contribute to Accor’s broader goal of creating a more sustainable future for hospitality.
